Tacos, Plain and Simple

I got a new book for my birthday: Quick and Easy Vegan Comfort Food. It’s a great cookbook, the kind you can leaf through just for fun. I’ve been wanting this book for a while, and I kept meaning to make one of the sample recipes listed on the website—specifically, the Fool-Your-Friends Tacos. Made them last week, and they were indeed quick and easy. Tasty, too, even without additional toppings.

To sum up, they’re quick, easy, tasty, filling, and cheap—it cost about $3 to make eight tacos. Apparently our local taco cart charges $3 each, so this week I saved $21 by making them myself. Here’s where I’d like that money to go:

Harlem Children’s Zone may not be saving lives as obviously as a humanitarian aid organization does, but they serve children, families, and the larger community with a goal of addressing generational poverty (and all its ill effects) at the root(s). And it looks like HCZ’s board is matching online donations this month, so this adds up to $42 worth of difference being made. Some good!
